Ingredients

coconut oil

onion, finely chopped

chicken, with or without bones, cut into small cubes

tomato paste/puree

coconut milk

sugar

fresh chopped coriander leaves

chopped ginger and garlic

tsp
freshly squeezed lemon juice.
How to prepare

Sauté the onions in coconut oil until translucent and lightly golden brown.

Add the tomato paste or tomato purée and mix well.

Stir in the chicken coconut curry spice mix and 2 tablespoons of water.

Add the marinated chicken, mix, and simmer covered over low heat for 5–10 minutes, stirring occasionally.

Add the cream and sugar (optional), stir briefly until the desired consistency is reached.

Serve hot and garnish with cilantro.
