Vegetable Stew

Ingredients
- ½ tbsp coconut oil
- 5 beans (chopped)
- 1 carrot (chopped)
- 1 potato (cubed)
- 3 tbsp peas / matar
- 10 florets cauliflower / gobi
Or
- Frozen Vegetables
- 1 inch cinnamon
- 1/2 tsp Garam Masala
- ½ onion (sliced)
- 1 green chilli (slit)
- 1 inch ginger (julienne)
- 1 cup water
- 1 tsp salt
- 1 cup coconut milk (thin- 1/3 water with 2/3 coconut milk)
- Few dried curry leaves
- ¼ cup coconut milk (thick)
Instructions
- Firstly, in a large deep pan, heat ½ tbsp oil and add 1 inch cinnamon.
- Now add ½ sliced onion and saute till they shrink slightly and become translucent. Now add Garam Masala.
- Next, add 5 chopped beans, 1 carrot, 1 potato, 3 tablespoon canned green peas, 10 florets cauliflower. Or you can use Frozen Vegetables.
- Add in 1 green chilli and 1 inch ginger.Saute for a minute.
- Add 1/4 -1 cup water, 1 tsp salt and few dried curry leaves. Mix well.
- Cover and boil for 5 minutes or till vegetables are half cooked.
- Now add 1½ – 2 cups coconut milk (thin consistency) and mix well.
- Boil for 8-10 minutes or till vegetables are cooked completely.
- Turn off the flame and add few dried curry leaves, ¼ cup thick coconut milk.
Note: Ideal when prepared in coconut oil.
