Prawns Masala

Ingredients
- 250-300 grams prawns
- 1 onion thinly sliced
- 1 Tomato chopped
- 1 inch ginger thinly sliced into sticks
- 4 cloves garlic thinly sliced into sticks
- 20-30 chopped curry leaves
- 1/4 sliced green chillies
- 1/4 teaspoon freshly ground pepper
- 1/4 teaspoon turmeric
- 1/2 teaspoon kashniri red chilli powder
- 1 teaspoon coriander powder
- 1/2 teaspoon ground fennel seed
- 2 tablespoon coconut oil
- ½ cup water
- Salt to taste
Instructions
- Take the cleaned prawns into a bowl. Add some salt, 1 tsp coriander powder and 1 tsp turmeric powder. Combine them well and set it to marinate for 15minutes.
- Take a pan and heat coconut oil. In medium heat, add the onions and saute the onions for few minutes till they lightly caramelize.
- Next, add the chopped tomato, sliced ginger, garlic, green chillies and saute for next 5-7 minutes. Slowly pour in water as required.
- Add in the prawns next, with few curry leaves and mix everything well. Let it cook for 10 minutes and saute them intermittently.
- Cook until all the moisture from the prawns dry out to form a thick gravy consistency.
- Now add crushed or powdered fennel seed.
- Lastly, mix continuously and cook on high flame for a minute and garnish with a spoon of coconut oil and curry leaves.
- Prawns Masala is ready to be served!
