Beef Vindaloo

Ingredients

  • 750 grams boneless beef cubes
  • 6 tablespoons ginger garlic paste
  • ¼ cup distilled white vinegar
  • 2 tablespoons of plain yogurt
  • ½ tablespoon black pepper
  • ½ tablespoon kashmiri red chilli powder
  • Salt to taste
  • 2 cups chopped onions
  • ¼ cup any vegetable oil
  • 4 chopped plum tomatoes / canned
  • 2 tablespoons chopped cilantro
  • 1 cup of water

Instructions

  1. In a mixing bowl, combine vinegar, ginger garlic paste, yoghurt, salt, black pepper, and red pepper.
  2. Add the beef cubes and combine until coated evenly. Place a plastic wrap over the bowl, and marinate in the fridge overnight or leave it outside for 60 minutes.
  3. Over medium heat, warm the vegetable oil in a big pot. The onions should be cooked and stirred in the hot oil for about 10 minutes until they soften and become translucent and golden brown.
  4. Add the beef cubes and cook by stirring continuously for 10 minutes until the meat is no longer pink on the exterior.
  5. Add in the tomatoes and cook for another 5 minutes.
  6. Add the water and cook the meat for 40-45 minutes covered or pressure cook for 6 whistles.
  7. Garnish with cilantro and serve hot.
