Beef Vindaloo

Ingredients
- 750 grams boneless beef cubes
- 6 tablespoons ginger garlic paste
- ¼ cup distilled white vinegar
- 2 tablespoons of plain yogurt
- ½ tablespoon black pepper
- ½ tablespoon kashmiri red chilli powder
- Salt to taste
- 2 cups chopped onions
- ¼ cup any vegetable oil
- 4 chopped plum tomatoes / canned
- 2 tablespoons chopped cilantro
- 1 cup of water
Instructions
- In a mixing bowl, combine vinegar, ginger garlic paste, yoghurt, salt, black pepper, and red pepper.
- Add the beef cubes and combine until coated evenly. Place a plastic wrap over the bowl, and marinate in the fridge overnight or leave it outside for 60 minutes.
- Over medium heat, warm the vegetable oil in a big pot. The onions should be cooked and stirred in the hot oil for about 10 minutes until they soften and become translucent and golden brown.
- Add the beef cubes and cook by stirring continuously for 10 minutes until the meat is no longer pink on the exterior.
- Add in the tomatoes and cook for another 5 minutes.
- Add the water and cook the meat for 40-45 minutes covered or pressure cook for 6 whistles.
- Garnish with cilantro and serve hot.
